Yellow Perch Stir-Fry
Favorite of Heather Egger - Middle Bass, Ohio
 
Course: Main Entrée
Servings: 4-6

 
Ingredients & Instructions:
1 pound of perch
1 teaspoon cornstarch
2 tablespoons vegetable oil
¼ cup teriyaki sauce
1 tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon garlic powder
1/8 teaspoon pepper
1 pound fresh broccoli
¼ cup vegetable oil
½ cup of thinly sliced green onion
1 cup of thinly sliced carrots
1 cup of sliced fresh mushrooms

Cut perch fillets into diagonal strips. In medium bowl, toss fish strips with cornstarch until coated. Add vegetable oil, teriyaki sauce, lemon juice, salt, garlic powder and pepper. Cover and refrigerate at least 30 minutes. Stir in perch and marinade; add mushrooms and broccoli. Cook and stir over medium-high heat until fish flakes easily at thickest part, 4-6 minutes.
