In mixing bowl, combine pancake mix, water and sugar. Stir until mixture is smooth. Heat skillet over medium heat and add just enough oil or shortening to lightly coat the bottom. Pour about 2 tablespoons of batter into center of skillet and tilt from side to side. If you notice that the pancake is not spreading as much as you like, add a little more water, a teaspoon at a time, to thin out the batter. When first side is golden brown, flip pancake.
